Pie Recipes


Pie Crust


This recipe can be increased to any size you want , start with flour 1 rounded cup per 2 crust pie, salt and shortening are half of flour measurement and water is half of shortening measurement

Enough for 1  (2 crust ) Pie

1 rounded cup of flour
1/2tsp salt
1/2cup butter flavored Crisco *

Mix together with fingers till fine crumbs form

Add  1/4cup water

* you may use any form of solid fat:  butter, margarine, shortening

To make a pie shell place dough on back side of tin, poke with fork bake on bottom shelf of oven at 375 for 10-12 minutes

A 2 crust pie is baked on bottom shelf of oven at 375 for 1 hour

Add 20-25 minutes for frozen pie

Before baking 2 crust pie, frozen or fresh dot top with milk and sprinkle with sugar.

 

Cream Pie Filling

5 cups milk
2 eggs
1 cup sugar
1/2cup corn starch
1 small package cook and serve pudding  ( Vanilla, Chocolate, Butterscotch)
1 tsp vanilla
1 tsp lemon extract if  making vanilla

Beat all ingredients together, Cook over medium high heat, stirring constantly
Remove from heat when thick place plastic wrap directly on pudding and cool completely.

Place in baked pie shell.
Top with whip cream

Pie Fillings


Apple:        1 large can sliced apples in water
                   Bring to a boil and thicken with the following
                   Ingredients  that have been mixed together
                   6 cups sugar
                   7/8 cup clear gel
                   1 tsp apple  pie  spice
                  Stir until  thick and remove from heat

Cherry:       1 large can sour pie cherries in juice
                    6 cups sugar
                    2 tsp almond flavoring
                    Bring to a boil and thicken with
                   1  &  1/2cups pie tone that has been diluted with water
                   Stir until thick  and remove from heat

Razzleberry or Blueberry:

                   6 cups water
                   3  & 1/2cups sugar
                   1  -  1 lb package frozen berries
                   Bring to a boil and thicken with 1 & 1/2cups pie tone that has been diluted with water
                  Stir until thick and remove from heat
                  Add 2  -  1 lb packages frozen berries
                  Gently fold in and allow to cool.
                  For Razzle  I cook with  a package of  blackberries and then I fold in a package of                         raspberries and a package of boysenberries
                  For Blueberry   I substitute blueberries for all 3 packages

 ***  You can substitute equal amounts of cornstarch for pie tone
