Roll Recipes

Here are the recipes used for the mother/daughter activity we had last month!!

Quick and Easy Hot Rolls
2-1/2 cups warm water                          2 t. salt
2 T. yeast                                               2/3 cup powdered milk
1/2cup sugar                                          5-6 cups flour
1/2cup oil
Mix everything together and knead with stand mixer for about 6 minutes.  Or knead by hand until smooth and well blended.  You’ll know you have enough flour when the dough cleans the sides of the bowl but the dough is still soft.  Shape as desired and let rise until double.   Bake at 400 for 12 minutes. 
This dough is great for cinnamon rolls.  If making cinnamon rolls, roll dough about 1/2" thick.  Spread with butter, sprinkle with brown sugar and cinnamon.  Chocolate chips and raisins may be added if desired.  Roll up and slice into 1-1/2" pieces.  Place in pans and let raise until double.  Bake as directed until golden brown.  While hot, ice with butter cream glaze.  (1 cube butter, 3 or 4 cups of powdered sugar, 1 teaspoon vanilla, and milk to make the desired consistency...usually about 1/4 to 1/3 cup)

Fluffy Crescent Rolls
1 c. milk warmed
1 tsp. salt
1/2 c. margarine melted
3 eggs beaten, add 1/2 c. sugar
1/3 c. warm water
1 Tbsp. sugar
1 Tbsp. yeast  (I use SAF insta-yeast)
5-6 c. flour
I just warm 1 1/3 cups milk in the microwave, and add the melted butter, salt, eggs and sugar.  I then add the yeast with 2 c. flour.  Beat well (consistency of cake batter).  Add 3 more cups of flour and mix well… dough will be soft.  If you are using your Bosch, do not knead more than 6 minutes.  Cover with plastic wrap, or lid, and let rise to top of bowl once (about 3 hours).  Divide dough in half and roll out into a circle.  Brush with melted butter, then using a pizza cutter, cut into pie shaped sections.  Roll into crescents.  Let dough rise until double, then bake at 375 10-12 minutes, until lightly brown.  You may need to adjust the time for your oven... I have to bake them a little longer.
  1. Bonnie’s Sweet Dough
2 c. warm liquid
3 T. yeast
2/3 c. sugar
2/3 c. shortening
3 eggs
2 t. salt
6-7 c. flour
Mix all the ingredients together and knead until well blended.  Shape and bake as directed below.
How to Shape a Swedish Tea Ring
Use ¼ to ½ of the basic sweet dough recipe, depending on how big you would like your ring.  Shape the dough into a rectangle about 1 ¼ inches thick.  Brush with melted butter and sprinkle with brown sugar, cinnamon, nuts, craisins, etc.  Roll like a jelly roll and shape into a ring.  Place on a greased baking sheet and cut with scissors at 1 inch intervals almost through the ring.  Turn slices slightly.  Let raise until double in size and bake at 375 degrees for 25 to 30 minutes.  While warm, spread with Thin Sugar Frosting.

Thin Sugar Frosting
1 cup powdered sugar, 1 t. vanilla (almond or rum extract), 2 T. warm milk, dash of salt.  Mix and beat until very smooth.
